1 ⅛ cups butter
2 ¼ cups caster sugar
4 eggs (beaten)
¾ cup self-rising flour
½ cup Coconut flakes
½ teaspoon Coconut essence
cup plain Dark chocolate (60% cocoa solids; melted)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line the base of a 21 cm| 8 inch square tin with non-stick baking paper.

Put the butter and sugar in a large pan and gently melt, stirring so the mixture doesn't burn. When the mixture is melted, remove from the heat and leave to cool slightly.
3.
Stir in the eggs, little by little, followed by the flour.
4.
Pour about 1/4 of the batter into a small bowl and stir in the coconut and coconut essence.
5.
Stir the melted chocolate into the remaining batter and spread the batter evenly in the tin.
6.
Spoon the coconut batter evenly over the chocolate layer, then spread carefully to form an even layer.
7.
Bake for 30-35 minutes. Cool in the tin on a rack, then cut into squares or bars.
