- 2 handfuls Elderflower
- 1 organic lemon
- 500 grams sugar
- 10 grams Citric acid (from the pharmacy)

- Rose water (from the pharmacy)

Preparation steps
1.
Brush the elderflowers to remove any debris. Do not wash the elderflowers. Rinse the lemon in hot water, and cut into slices. Bring the sugar and 1 liter (approximately 1 quart) of water to a boil slowly, stirring constantly. Reduce the heat, and simmer for 10 minutes.

Remove from the heat and let cool. Add the elderflowers and lemon slices and place in a large pot. Cover, and let infuse for two days.

Pour the mixture through a fine strainer lined with cheesecloth into a pot. Add the citric acid and bring to a boil. Remove from the heat, pour into a clean, prepared bottle, and seal tightly.
4.
To prepare a drink with the syrup, place some of the syrup in a glass. Dilute to taste with the rose water, garnish with rose petals, and serve.
