½ lemon (zested)
75 grams clarified butter
250 grams Elderberry
sugar (to sprinkle)

Preparation steps

1.

Rinse the potatoes and cook in simmering salted water for 25 minutes. Drain, let cool slightly, peel and press through a ricer. Fold the quark into the cooled potato mixture. 

2.

Stir in the eggs, flour, sugar and lemon zest. Knead well on a floured surface and shape palm-sized cakes. Heat the clarified butter in a pan and saute the cakes in batches over medium heat for about 3-5 minutes.

Rinse the elderberries, mix with sugar and spoon over the pancakes before serving.
