8 ozs sugar (plus more to taste)
3 Tbsps lemon juice

Preparation steps

Rinse the elderberries thoroughly several times, discarding any green berries. Gently simmer the berries with 500 ml (approximately 17 ounces) of water for 15 minutes. Pass the juice through a fine strainer lined with cheesecloth. Drain thoroughly, then squeeze the berries to extract all the juice. Mix the juice with the sugar and lemon juice, then return to a boil. Rinse the bottles with boiling water, then add the hot juice. Seal the bottles tightly, and cool completely.

If you'd like to preserve the elderberry juice for a long time, place the bottles in a hot water bath for 5 minutes. Remove from the water and cool completely. This allows the juice to be saved for several months if stored in a dark, cool place.
