- 3 Tbsps olive oil
- 1 onion (finely chopped)
- 1 red Bell pepper (diced)
- 1 ½ cups cooked potatoes (thinly sliced)
- 2 cloves garlic cloves (crushed)
- 1 Tomato (diced)
- ¾ cup peas
- 2 Tbsps parsley
- 1 tsp thyme
- salt
- peppers
- ⅜ cup milk
- 8 eggs
- ½ tsp Curry powder
- ½ tsp paprika
- grated Nutmeg

Preparation steps
1.
Preheat the oven to 180°C (160° fan) 350°F gas 4. Grease a baking dish.
2.
Heat the olive oil and gently cook the onion until soft. Add the red pepper and cook for a 3 minutes.
3.
Add the sliced potatoes, garlic, tomatoes, peas, parsley and thyme and cook for a 3 minutes. Season with salt and place in the baking dish.
4.
Whisk together the milk, eggs and spices and pour over the vegetable mixture.
5.
Bake for about 25-35 minutes, until the eggs are set and lightly browned.
6.
Garnish with olives and thyme.
