3 Tbsps grated Cheddar cheese

3 cups ripe Cherry tomatoes (halved or quartered)
1 Tbsp grated Parmesan

Preparation steps

Heat the oven to 350°F.

Heat the oil in a large ovenproof frying pan.

Stir together the eggs and cheddar cheese and season to taste with salt and pepper.

Pour the egg mixture into the pan and cook until the eggs begin to turn golden brown around the edges. Arrange the tomatoes on top and sprinkle with parmesan.
5.
Put into the oven and bake for 8-10 minutes until just set in the centre.
6.
Sprinkle with chopped parsley.
