- 1 large, yellow pepper (washed; seeded; and cut into strips)
- 3 stalks Celery (sliced)
- 2 large Tomatoes (washed; seeded; and sliced)
- 4 cups canned cannellini beans (or white)
- ½ cup extra virgin olive oil
- 2 Tbsps white wine vinegar
- ½ tsp dried oregano
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- fresh thyme (for garnish)

Preparation steps

In a large bowl combine the peppers, celery, tomatoes and cannellini beans.

Whisk the olive oil, wine vinegar, oregano, salt and pepper together. Pour over bean mixture. Gently toss to coat. Chill for 2 to 3 hours, or until flavors come together.

Garnish with fresh thyme and serve.
