- ¼ cup caster sugar
- ⅔ cup butter

- 1 egg (beaten)

Preparation steps
1.
Soak the raisins in the orange juice in a small bowl for 10–15 minutes.
2.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a large baking tray.
3.
Sift both flours and baking powder into a mixing bowl. Stir in the sugar, then rub in the butter until the mixture resembles breadcrumbs and make a well in centre.
4.
Add the soaked raisins and any remaining liquid, buttermilk and egg to the flour mixture and mix to a soft, slightly sticky dough.
5.
Knead lightly on a floured surface and roll or pat out 2.5cm|1" thick.
6.
Cut into rounds with a floured 6.5cm|2 1/2" cutter. Lightly knead together the trimmings and cut out more rounds.
7.
Place on the baking tray and brush the tops with milk. Bake for 12-15 minutes until well risen and golden. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
