- 1 cup cooked, mashed Pumpkin
- 2 Tbsps butter (melted)
- 1 Tbsp honey
- 1 unwaxed lemon (finely grated zest)
- ½ cup Golden raisins
- 2 cups whole-wheat self-rising flour (plus extra for dusting)
- milk (to mix)

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray.
2.
Mix together the pumpkin, butter, honey, lemon zest and sultanas in a mixing bowl.
3.
Work in the flour and add enough milk to form a soft dough.
4.
Knead lightly and roll out on a lightly floured surface into a round about 2.5cm|"1 thick. Cut into wedges and place on the baking tray.
5.
Bake for about 15 minutes, until risen and golden brown. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
