- 16 ozs onions (finely chopped)
- 1 ⅓ cups white Malt vinegar
- 35 ozs cooking Apple (peeled and cored weight, chopped)
- 2 tsps Cardamom (crushed)
- 1 ½ cups light brown sugar
- ¾ cup raisins (or golden raisins)

Preparation steps
1.
Put the onions and half the vinegar into a large heavy-based pan and bring to a boil.
2.
Reduce the heat and simmer gently for 10 minutes.
3.
Add the apple to the pan with the remaining vinegar, cardamom seeds, sugar, raisins and a sprinkling of salt and pepper.
4.
Stir over a low heat until the sugar has dissolved completely, then increase the heat and simmer steadily, for about 40-60 minutes, stirring occasionally until the mixture is very thick.
5.
Spoon into hot sterilised jars, seal and label.
6.
Leave to mature for up to 3 months in a cool, dry, dark place.
