- 3 Tbsps balsamic vinegar
- ½ tsp Dijon mustard
- 1 tsp dark Agave syrup
- 4 ripe Figs (Bursa)
- 4 cups Arugula (washed)
- 1 cup Walnut (roughly chopped)
- ¾ cup firm dairy-free cheese (cubed)
- flaked Sea salt
- freshly ground peppers

Preparation steps
1.
Shake together the oil, vinegar, mustard, agave nectar, and seasoning in an empty jam jar.
2.
Season the figs with salt and pepper.
3.
Toss with the rocket, walnuts, and cubed dairy-free cheese in a mixing bowl.
4.
Lift into a bowl and serve with the dressing on the side.
