- 3 Tbsps olive oil
- 14 ozs Mushrooms (halved or quartered)
- salt
- peppers
- 1 Tbsp sugar
- 1 chili pepper (finely chopped)
- 2 cups Pecan
- 5 ozs Radish (sliced)
- 1 cooking Apple (cored and chopped)
- 3 ½ ozs baby Spinach
- For the dressing
- 3 Tbsps olive oil
- 4 Tbsps Cider vinegar
- 2 Tbsps lemon juice
- 1 Tbsp coarse Mustard
- 2 Tbsps water

Preparation steps
1.
Heat 2 tablespoons of oil in a pan and cook the mushrooms for 2 minutes. Remove from the pan and season to taste with salt and pepper.

Heat the remaining oil in the same pan and melt the sugar. Add the chilli and stir in the nuts. Cook until the nuts are browned. Remove from the pan and leave to cool.
3.
Mix together all the salad ingredients and arrange on plates or in bowls.
4.
For the dressing: mix together the oil, vinegar, lemon juice, mustard and water. Season to taste with salt and pepper. Drizzle over the salad just before serving.
