- ⅔ cup raisins
- 2 cups warm water
- ½ cup chopped almonds
- 1 cup rolled oats
- 1 ⅓ cups Brown rice flour
- 1 tsp ground cinnamon
- ½ tsp salt
- 6 Tbsps sunflower oil
- ½ cup Maple syrup
- ⅓ cup Brown rice syrup
- 2 tsps vanilla extract

Preparation steps
1.
Soak the raisins in the warm water for 15 minutes.
2.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
3.
Spread the almonds and oats on a baking tray and toast them in the oven for 8-10 minutes, stirring occasionally.

Put 1/2 the almonds and oats in a food processorand blend until fine.
5.
Add the remaining almonds and oats, flour, cinnamon and salt. Pulse a few times to combine.
6.
Whisk together the oil, maple syrup, brown rice syrup and vanilla in a mixing bowl.
7.
Add the dry ingredients and stir to combine, then stir in the drained raisins.
8.
Drop tablespoons of the mixture onto the baking trays, 5cm|2" apart.
9.
Bake for 15-20 minutes until golden brown. Cool on the trays for 5 minutes, then place on a wire rack to cool completely.
