Preparation steps

Squeeze the the juice from the lemon then mix in a bowl with 1 liter (approximately 1 quart) of cold water.

Rinse the apples, and remove the core with a cutter. Thinly slice the apples horizontally using a mandoline. Place in the lemon water and infuse for 15 minutes. Remove from the water and pat dry. Place the apples on a baking sheet lined with parchment paper. Dry the apples in a 60°C convection oven for 4 hours, with the oven door slightly propped open. Alternatively, you can hang the apples from kitchen twine, and let air dry for 3-4 days in a warm place.
