Muesli and dates both provide an excellent portion of protein. Dates are a wonderful addition to these bars because they naturally sweeten them while also providing nutrients.
You can eat these at home for breakfast, a light snack, or dessert, or you can take them to go and eat them on the road or in the office!

- 4 Tbsps Chia seeds
- 1 cup water
- 1 ¾ cups Medjool Date (pitted)
- 3 Tbsps Coconut oil
- 10 ozs water
- 4 cups rolled oats
- 0.334 cup golden raisin
- 0.334 cup raisins
- 1 ⅓ cups sliced almonds
- ⅔ cup chopped Cashews
- 1 tsp ground cinnamon

Preparation steps
1.
Heat the oven to 400°F. Line a 6" x 9" baking tin with non-stick baking paper.
2.
Mix together the chia seeds and 1 cup of water and leave to stand for about 10 minutes until a gel forms.
3.
Put the dates and coconut oil in a pan over a low heat until the coconut oil has melted and the dates are soft.
4.
Put into a food processor or blender with 10 ounces water and blend to a paste.
5.
Put the oats, golden raisins, raisins, nuts and cinnamon in a mixing bowl and stir in the date mixture. Stir in the chia gel.
6.
Put into the tin and spread evenly.
7.
Bake for 30-35 minutes, until the top is golden. Cool in the tin for 20 minutes, before cutting into bars.
