1 tart Apple (such as Boskop)
1 Tbsp lemon juice
2 handfuls Fresh herbs (parsley, oregano with flowers)
9 ozs Pastry flour
½ tsp salt
2 tsps Baking powder
3 Tbsps Vegan Margarine
5 ozs Almond milk

Preparation steps

Peel the apples, cut out the core and grate the flesh. Mix the grated apple with the lemon juice. Rinse the herbs, shake dry and chop the leaves together with flowers.

Line a baking tray with parchment paper.

Mix the flour with the salt and baking soda in a bowl. Place the margarine in small pieces into the flour to complement the milk. Mix the flour mixture gently, but do not knead too much as the dough would otherwise be too tough. Add the grated apple and the herbs to the flour mixture and mix only until all the ingredients are moist.

Roll out the mixture on a floured surface about ½ inch thick or flatten with hands and cut out round scones of about  2½ inches diameter. Place the scones on the lined baking tray and bake in a preheated oven at 220°C / 420°F for about 15 minutes.
