1 cup Brown Lentils
2 Tbsps Oil
1 cup green Bacon (or pancetta)
2 carrots (peeled and finely diced)
1 onion (finely chopped)
1 large potato (peeled and finely diced)
2 bay leaves
2 Tbsps Sour cream
thyme (to garnish)

Preparation steps

1.
Rinse the lentils and soak overnight. Rinse again and drain.
2.
Put the oil into a hot pan and saute the bacon until the fat begins to run. Add the diced vegetables, cook for about 5 minutes then add about 500 ml water.
3.
Add the drained lentils and bay leaves and simmer over a low heat for about 45 minutes. Stir from time to time and add more water if necessary.
4.
Stir in the sour cream, season to taste and serve garnished with thyme.
