- For the starter
- 1 ⅔ cups clean ""00"" flour
- ¾ cup water
- 1 Tbsp Yeast
- For the dough
- 1 ⅔ cups clean ""00"" flour
- ¾ Tbsp Yeast
- ¾ cup water
- 1 Tbsp olive oil
- ¾ Tbsp salt
- 1 cup Chorizo (or salami sausage, finely diced)

Preparation steps
1.
Mix the flour for the starter with the water in a large bowl and add the yeast. Mix together well for a few minutes, then cover and leave to rise overnight.
2.
Next day add the next amount of flour and yeast and mix well. Gradually add the water and oil, mixing it together in a food mixer for a few minutes. Then add the salt and mix until you have a very sticky dough. Stir in the diced sausage.
3.
Transfer the dough to a large oiled bowl and leave to rise, covered, for one hour.

Move from the bowl and leave to rest on a floured work surface for 30 minutes.
5.
Preheat the oven to 230°C | 450F | gas 8.
6.
Pull the dough into 3 approximate long flat slipper shapes. Place on a lined baking sheet and leave to rest for 10 minutes.
7.
Bake in the oven for 25 minutes or until risen and golden brown. Transfer to a wire rack to cool.
