It also provides various B vitamins and particularly well digestible iron, which plays an important role in blood formation and oxygen transport.

The delicious braised cucumbers from the oven can also be easily made vegetarian by replacing the minced beef with either soya chips or lentils.

4 tomatoes
2 Tbsps Basil (chopped)
1 shallot
2 garlic cloves
3 Tbsps olive oil

Preparation steps

1.

Peel and finely chop shallot and garlic cloves. In a pan, sauté shallot and garlic in hot oil. Add ground meat and fry until browned and crumbly. Remove from heat and season with salt and cayenne pepper.

Blanch tomatoes in boiling water, then peel, quarter, core and dice. Stir tomatoes and basil into ground meat mixture.

Peel cucumbers, halve lengthwise and scrape out the seeds with a spoon. Stuff cucumbers with ground meat mixture. Place cucumbers in a baking dish and bake in a preheated oven at 180°C (approximately 350°F), about 15 minutes. Serve immediately.
