12 King prawn (peeled and deveined; tail segment attached in shell)
1 Fennel bulb
1 Cucumber
2 Tbsps Rice vinegar
2 Tbsps sesame oil
1 Tbsp honey
light soy sauce
2 chili peppers
1 tsp ginger (freshly grated)
1 bunch cilantro
vegetable oil (for cooking)

Preparation steps

1.

Rinse prawns and pat dry.

2.

Rinse fennel, cut into quarters, remove the stalk and cut into very thin slices.

3.

Peel cucumber, cut in half lengthwise, remove seeds and cut into slices.

4.

Rinse chile peppers and split in half lengthwise, but do not slice all the way through.

5.

Fry cilantro leaves in a little hot oil and drain on paper towels.

6.

Heat a little oil in a wok. Add prawns and fry. Stir in chile peppers, ginger and honey. Add rice vinegar and a little soy sauce, then stir in cucumber and fennel. Season with soy sauce and serve sprinkled with fried cilantro.
