- ½ cup Walnut
- 4 Tbsps rapeseed oil
- 3 Tbsps white wine vinegar (to taste)
- 3 Tbsps lemon juice
- ¼ cup Orange juice
- White pepper
- 1 Tbsp runny honey
- 4 Tbsps grapeseed oil
- 5 cups young White cabbage (finely chopped)
- 2 Mandarin orange (split into individual segments and halved)
- ⅓ cup Date (pitted and halved or quartered)
- 1 Tbsp parsley (roughly chopped)
- 1 ¼ cups Feta (crumbled)
- 1 ¼ cups Gorgonzola (crumbled)

Preparation steps
1.
Fry the nuts in a pan of hot oil until crispy, then drain and set aside.
2.
Mix together the vinegar, lemon juice, orange juice, salt, ground white pepper and honey to create a marinade. Stir in the the grape-seed oil and add the cabbage, mandarins, dates, nuts and parsley. Cover and leave to macerate for at least 1 hour.
3.
Arrange the salad on four plates and sprinkle with the cheese.
