- ⅔ cup Mayonnaise
- 1 ½ tsps Worcestershire sauce
- 1 Tbsp onions (finely chopped)
- 1 Tbsp fresh parsley (minced)
- 1 Tbsp fresh lemon juice
- salt (to taste)
- freshly ground Black pepper (to taste)
- 2 cups cooked Rice
- 3 cups cooked Ground turkey
- 1 cup seasoned, fine breadcrumbs (more if needed)
Preparation steps

In a large bowl, combine mayonnaise, Worcestershire sauce, onion, parsley, lemon juice, salt and pepper. Stir in the cooked rice and ground turkey. Chill in the refrigerator for 3 hours.

Preheat oven to 450ºF / 230ºC.

To shape croquettes, with clean hands roll 1/4 cup of the turkey mixture into 3-inch logs. Roll in breadcrumbs until evenly coated. Place on an ungreased baking sheet and bake for 20 to 25 minutes, or until nicely browned. Serve with cranberry sauce and green salad, if desired.
