- ½ cup unsalted butter
- ¼ cup xylitol
- ½ cup honey
- 1 egg
- ½ cup crunchy Peanut butter (heaped)
- 1 cup self-rising flour (heaped)
- 1 cup all-purpose flour (heaped)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
2.
Beat the butter until creamy, then beat in the xylitol.
3.
Slowly pour in the honey, beating constantly until blended.
4.
Add the egg and peanut butter, beating until fully incorporated.
5.
Stir in both flours until well combined.
6.
Roll the dough into 5cm |2" balls. Place the balls on the baking trays, spacing them approx 6cm |2 1/2" apart. Press a fork into each dough ball twice to make a crisscross design.
7.
Bake for 10-12 minutes until risen and slightly brown around the edges.
8.
Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
