For Crepes
3 eggs
1 ½ cups all-purpose flour
¾ cup milk
¾ cup water
¼ tsp salt
3 Tbsps melted butter (cooled)
non-stick cooking spray
For Filling
1 cup cream cheese (softened)
½ cup powdered sugar (plus extra for dusting)
1 tsp pure vanilla extract
fresh Strawberries (washed; hulled and quartered)
fresh mint

Preparation steps

For Crepes.

In a large mixing bowl, beat the eggs. Mix in the flour gradually. Slowly add the milk and water, stirring to combine. Add the salt and butter and mix with a whisk until smooth.

Heat an 8-inch skillet coated with cooking spray over medium high heat.

Working in batches. Scoop 2 tablespoons of batter onto the skillet. Cook the crepe for about 2 minutes, or until the top appears dry. Loosen with a spatula, turn and cook the other side for 15 to 20 seconds longer. Repeat until all batter is used, greasing skillet as needed.

Transfer to a wire rack. Stack crepes separated by waxed paper. Set aside.

For Filling.

In a medium bowl, beat cream cheese until light and fluffy. Beat in confectioners' sugar and vanilla extract, beating until smooth.

Spoon filling into a pastry bag. Pipe filling onto the center of the crepe. Fold side edges of the crepe to the center. Dust with confectioners' sugar. Garnish with strawberries and fresh mint. Dust with confectioners' sugar. Serve.
