2 cloves garlic cloves (chopped)
4 cups canned, whole Tomatoes
salt (to taste)
freshly ground Black pepper (to taste)
1 cup heavy cream (or half and half)
3 cups Penne (cooked)
4 sprigs fresh Basil (for garnish)

Preparation steps

Heat olive oil in a large saucepan over medium heat. Add garlic and saute until fragrant and golden brown around the edges, about 3 minutes. Add tomatoes, season with salt and pepper and simmer, stirring frequently for 25 minutes. Let cool slightly and process the tomato mixture in a food processor or a food mill, until smooth. Return to saucepan.

Reduce heat to low and let the sauce simmer for 10 minutes. Gradually stir in the cream or half and half and cook until thoroughly heated and flavors blend, 5 to 7 minutes longer (do not boil).

Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 8 to 9 minutes. Drain pasta and add it to tomato cream sauce. Toss to coat.

Divide among plates. Garnish with fresh basil leaves. Serve.
