- 12 ozs Fettuccine
- 3 cups large shrimp (peeled and deveined)
- 2 scallions (cleaned and chopped)
- 2 cloves garlic cloves (peeled and minced)
- 2 tsps olive oil
- ½ cup grated Parmigiano Reggiano
- 0.333 cup half and half cream
- 3 Tbsps reduced-fat cream cheese
- ¼ tsp freshly ground Black pepper
- 2 Tbsps chopped, fresh parsley
Preparation steps

Cook the pasta in a pot of boiling water, according to package instructions until the al dente.

Drain pasta in a colander over a bowl, reserving 1/4 cup cooking liquid.

Meanwhile, combine the shrimp, onions, and garlic in a small bowl. Heat a large skillet over medium-high heat. Add olive oil; swirl from side to side to coat. Add shrimp mixture, and sauté for 4 minutes or until the shrimp turn pink and are cooked through. Remove shrimp mixture from pan and keep warm.

Reduce heat to medium. Add reserved cooking liquid, Parmigiano-Reggiano cheese, half-and-half, cream cheese, and pepper to pan. Cook for 2 to 3 minutes or until the cheeses melt and the sauce thickens.

In a large pasta bowl, combine pasta, shrimp mixture and cheese mixture. Gently toss. Garnish with chopped parsley, divide among plates and serve..
