2 ⅔ cups waxy potatoes (halved)
3 Tbsps olive oil
1.333 cups smoked Salmon (diced)
1.333 cups cream cheese (full-fat)
¼ cup cream (at least 30% fat)
Dill (finely chopped)
1 Tbsp lemon juice
2 cups Arugula

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Place the potatoes on a baking try lined with grease-proof paper with the cut side facing up. Drizzle with the olive oil, season with salt and ground black pepper and bake for 20-25 minutes until golden brown.
3.
Mix together the salmon, cream cheese, cream and the dill and season with salt, ground black pepper and lemon juice.
4.
Arrange the potatoes on a plate with a dollop of the cream cheese mixture and garnish with the rocket. Serve immediately.
