- 200 grams Penne
- 1 Tomato (blanched, peeled and diced)
- 1 bunch scallions (trimmed and cut into thin rings)
- 400 grams button Mushroom (trimmed, thinly sliced)
- lemons
- 2 garlic cloves (finely chopped)
- 2 tsps thyme (chopped)
- 3 eggs
- 200 grams Whipped cream
- 100 grams Parmesan (freshly grated)
- salt
- freshly ground peppers
- butter (for the pan)
Preparation steps
1.
Cook pasta in a pot with plenty of boiling salted water until al dente, drain, rinse with cold water and drain again.

Mix eggs in a bowl with cream, Parmesan, vegetables, mushrooms and pasta and season with salt and pepper. Place pasta mixture in a buttered casserole dish and cover with small pieces of butter.
3.
Bake in a preheated 180°C (approximately 350°F) oven for about 40 minutes until golden brown.
4.
Serve with fresh salad and baguette if desired.
