5 eggs (separated)
0.333 cup sugar
2 ¼ cups Mascarpone
cup cold Coffee
cup Brandy (or marsala or almond liqueur)
20 Ladyfinger
cocoa powder (for dusting)

Preparation steps

1.
Beat the egg yolks with the sugar until pale and creamy (for best results use a hand mixer). Fold in the mascarpone. Whisk the egg whites until stiff and fold into the mixture.

Mix the coffee with the brandy. Quickly dip the sponge fingers in this mixture and place in a flat dish (approx. 18x25 cm). Spoon over half of the mascarpone mixture and smooth flat. Top with a second layer of dipped sponge fingers and spread the remaining mixture on top.
3.
Chill for at least 3 hours, ideally overnight. Dust with cocoa before serving.
