For the chocolate pudding
2 egg yolks
¼ cup brown sugar
3 Tbsps Corn starch
1 ⅔ cups milk
1 Tbsp cocoa powder
1 ½ cups chopped Dark chocolate (70% cocoa solids)
For the white pudding
1 egg yolk
¼ cup sugar
1 tsp Corn starch
2 ½ ozs white chocolate (chopped)
½ cup milk
To decorate
white Chocolate shaving

Preparation steps

1.
For the chocolate pudding: mix the egg yolks with the sugar.

Mix the cornflour with 2-4 tablespoons milk and stir until smooth.

Bring the remaining milk to a boil. Remove the milk from the heat. Whisk the cornflour-milk mixture into the boiled milk with the cocoa to taste and return to the heat and bring to a boil, stirring constantly.

Add the chopped chocolate and stir until melted. Remove from the heat and blend with the egg yolk mixture, stirring vigorously.

For the white pudding: mix the egg yolk with the sugar.

Mix the cornflour to a smooth paste with 1-2 tablespoons milk.

Bring the remaining milk to a boil, stir in the cornflour paste and return to a boil. Add the chopped chocolate and remove from the heat. Stir until the chocolate has melted and allow to cool slightly. Whisk in the egg yolk mixture.
8.
Fill four tall dessert glasses with the 2 puddings in layers: pour half the chocolate pudding into the dessert glasses, then add half of the vanilla pudding, then a few spoonfuls of the dark pudding. Layer the rest of the vanilla pudding over these and finish with the remaining chocolate pudding.
9.
With a long spoon handle make patterns between the pudding layers, by moving the spoon handle up and down vertically at intervals around the glass.
10.
Leave to cool, then chill until thick. Decorate with white chocolate shavings.
