- 40 grams fresh Spinach
- salt
- ½ bunch parsley
- ½ bunch Basil
- 2 sprigs Lemon thyme
- 1 garlic clove
- 2 Tbsps freshly grated Parmesan
- 1 Tbsp toasted Pine nuts
- 3 Tbsps olive oil
- 200 grams Sour cream
- 2 Crème fraiche
- salt
- freshly ground peppers
- lemon juice

Preparation steps
1.
Rinse and trim the spinach. Blanch in boiling water, then shock in ice water. Squeeze and chop the spinach. Rinse and dry the herbs, then remove the leaves.
2.
Peel the garlic. Finely chop the garlic, herbs, parmesan cheese, spinach, and pine nuts in a food processor.
3.
Mix the spinach mixture with the oil, sour cream, and crème fraîche. Season to taste with salt, pepper, and lemon juice.
