- 2 Tbsps Pastry flour
- 200 milliliters white wine
- 1 onion
- 2 butter
- 200 Gorgonzola
- 650 milliliters Vegetable broth (Instant)
- 2 Tomatoes (for garnish)
- salt
- freshly ground peppers
- ½ bunch Basil (for garnish)

Preparation steps

Mix flour with some wine in a bowl until smooth. Peel onion and chop finely. Melt butter in a pot and saute onion until soft. Add coarsely chopped gorgonzola and melt over low heat while stirring, add remaining wine, bring to a boil, add smooth flour mixture while stirring, add vegetable broth and boil everything while stirring, reduce heat and simmer for a few minutes. Meanwhile, rinse tomatoes, cut into quarters, remove seeds and cut into wedges.

Season finished soup with salt and pepper. Serve in soup bowls garnished with tomato wedges and basil leaves.
