400 grams Pastry flour
300 grams sugar
1 egg
200 grams softened butter
1 tsp Ground cinnamon
3 tart Apple (such as Boskop)
3 Tbsps lemon juice
2 eggs
500 grams Quark
2 egg yolks
100 grams Semolina flour

Preparation steps

1.

Pile flour on the working surface and make a well in the center. Add 150 grams (approximately 5 ounces) of sugar and an egg to the well. Cut butter into small pieces and arrange around the well. Chop with a knife until crumlby and knead into a smooth pastry.

Divide pastry into two parts and combine one with cinnamon. Shape both parts into balls and wrap in plastic wrap, refrigerate for 30 minutes.

Roll out pastry without cinnamon on a floured work surface and line pie pan with it, making an edge all around. Pierce pastry with a fork several times. Process remaining pastry until crumbly.

Rinse and peel apples, quarter and core and cut into wedges. Mix with lemon juice. Separate eggs. Whisk quark with remaining sugar and 4 egg yolks, add semolina flour. Beat egg whites until stiff and fold into the mixture. Arrange apples on the pastry and spread with cream mixture, spread witrh cinnamon crumble and bake in preheated oven at 160°C (approximately 325°F) for about 50-60 minutes. Remove from the oven and serve.
