- 1 onion
- 450 grams Celery root
- 150 grams floury potatoes
- 2 Tbsps butter
- 100 milliliters dry white wine
- 800 milliliters Vegetable broth
- salt
- peppers
- 150 grams Blue cheese
- 30 grams Walnut
- 4 parsley
- 125 milliliters Whipped cream
- Nutmeg (freshly grated)
- 1 tsp lemon juice

Preparation steps
1.
Peel onion, celery and potatoes. Rinse and cut into small cubes.
2.
Melt butter in a saucepan and saute onion until soft. Add potatoes and celery and saute briefly, deglaze pan with wine. Add broth. Season with salt and pepper and simmer on medium heat for about 20 minutes or until vegetables are soft.

Cut cheese into small cubes. Chop walnuts. Rinse parsley, shake dry and coarsely chop leaves.
4.
Add approximately 50 grams (approximately 2 ounces) of cheese and cream to the soup. Puree soup. Season with salt, nutmeg and lemon juice. Pour soup into bowls and sprinkle with cheese and parsley. Serve.
