- 8 strips Bacon
- 1 Tbsp unsalted butter
- 6 cups Celery (tops reserved)
- 2 cloves garlic cloves (peeled and mince)
- 1 onion (peeled and chopped)
- 1 Tbsp fresh thyme (finely chopped)
- salt (to taste)
- freshly ground White pepper (to taste)
- 2 medium, baking potatoes (peeled and cut into bite-size pieces)
- 2 cups chicken stock
- 2 cups Whole milk
- 1 handful fresh parsley (finely chopped)

Preparation steps

Place the bacon in the bottom of a large stockpot. Cook the bacon over low-medium heat for 12 to 15 minutes, or until crisp. Remove bacon and drain on paper towels.

Add butter to the stockpot, increase heat to medium, add celery, garlic, onion, and thyme. Season with salt and pepper; cook, stirring frequently, until mixture is soft, about 12 to 15 minutes.

Add the potatoes, stock and milk to the pot with the vegetable mixture and bring to a simmer. Cover and cook for about 25 to 30 minutes, stirring on occasion. Potatoes should be very soft.

Remove pot from heat. Using an immersion blender puree soup until smooth and creamy. Adjust seasoning if necessary. Ladle into serving bowls. Serve with crispy bacon roughly crumbled on top and finely chopped reserved celery tops and parsley.
