- 2 cups Raspberries (plus a few extra to garnish)
- ⅔ cup double cream
- 3 Tbsps powdered sugar
- ½ cup Greek yogurt
- ½ Orange (zest finely pared)
Preparation steps
1.
Tip the raspberries into a bowl and lightly crush with a fork so that it is a mixture of liquid and fruit. This will give the fool a more interesting texture.
2.
Lightly whip the cream with the icing sugar to soft peaks, then fold in the yoghurt.
3.
Fold the raspberries through to make a ripple effect, then divide between four bowls and garnish with orange zest and the reserved raspberries.
