2 ½ cups flour
1 tsp Baking powder
1 pinch salt
¼ cup sugar
cup butter (chopped)
2 egg yolks
1 tsp Dried yeast
7 Tbsps milk
In Addition
4 Tbsps butter (melted)
1 cup blackberry jam
1 egg yolk (beaten)
2 Tbsps water
fresh Blackberry (to serve)
fresh mint (to serve)

Preparation steps

1.
Preheat oven to 375ºF / 190ºC.

Sift flour, baking powder, salt and sugar into a bowl; cut in the butter.

Combine egg yolks, yeast and milk and add to the flour-butter mixture. Quickly knead into a smooth dough and form into a ball. Cover in plastic wrap and let stand for 30 minutes.

Line a cookie sheet with parchment paper. On a floured surface, roll dough out into a rectangle 1/4-inch thick. Brush dough with melted butter and spread with jam filling. Roll each of the long sides toward the center; place on prepared cookie sheet. Let rise for 10 minutes.
5.
Whisk the egg and water together; brush strudel with the egg wash. Bake for 35 to 45 minutes or until golden brown.
6.
Serve with fresh berries and sprigs of mint.
