Preparation steps

Rinse, peel, and dice the beet and the potatoes. Peel and finely dice the onion. Heat the butter in a pan, and sauté the onions. Add the beet and potatoes, sauté briefly, and cover with the broth. Simmer for 25-30 minutes over medium heat, then puree with an immersion blender. Season to taste with salt, pepper, and vinegar. If the soup is too thick, then add a little broth.

Pour the soup into deep bowls, garnish with a dollop of sour cream and the chives, and serve.
