1 yellow onion
1 Tbsp butter
800 milliliters Vegetable broth
1 bay leaf
4 Tbsps Crème fraiche

Preparation steps

1.

Peel and dice onion. Thinly slice about 75 grams of beets and dice the rest. In a pot, cook onion in melted butter until translucent. Add bay leaf, diced beets and beet slices and sauté briefly. Add broth and simmer about 20 minutes.

2.

Remove bay leaf and beet slices from the pot. Puree soup, stir in crème fraîche, and season with salt, pepper, caraway seeds and vinegar to taste. Ladle soup into warmed bowls and garnish with beet slices.
