- ½ cup butter
- 1 ¼ cups sugar
- 4 eggs
- 4 ⅓ cups Quark well drained (if necessary, squeeze in a clean dish towel)
- ⅓ cup Corn starch
- 1 tsp vanilla extract
- 1 tsp Baking powder
- 1 generous pinch lemon zest (finely grated)
- 1 pinch salt

- cream of wheat
- 4 ½ ozs semi-sweet chocolate (70% cocoa)
- powdered sugar (to dust)

1 Cutting board, 1 Large knife, 1 Small knife, 1 Measuring cups, 2 Pots, 1 Bowl, 1 Small bowl, 1 Slotted spoon, 1 Citrus juicer, 1 Tablespoon, 1 Hand mixer, 1 Immersion blender, 1 deep bowl, 1 Rubber spatula
Preparation steps
1.
Heat the oven to 180C fan / 200C / 400F / gas 6.
2.
Grease the cups of the muffin pan with butter and scatter with cream of wheat.
3.
Cream together the butter and sugar and beat in the eggs one by one.
4.
Stir in the quark, corn starch, vanilla extract, baking powder, lemon zest and salt.
5.
Spoon the batter into the pan cups and bake for approx. 30 minutes until golden brown.
6.
Remove from the oven, let cool for a few minutes then remove from the pan and cool on a wire rack.
7.
Melt the chocolate and drizzle over the muffins. Serve dusted with confectioner’s sugar.
