Cream and Berry Pudding Cups
Pulse the digestive biscuits in a food processor until they resemble breadcrumbs.
Transfer to a mixing bowl and add the melted butter to bind the mixture a little. Set to one side.
Whip together the cream and icing sugar until soft peaks form.
In a separate bowl, beat together the mascarpone and the fromage blanc until smooth. Fold together with the whipped cream until incorporated.
Arrange the digestive mixture evenly in the bases of 4 glass tumblers. Top with the sliced strawberries.
Add the cream and mascarpone mixture on top and garnish with a few of the whole strawberries. Finish with a sprig of mint on top and serve.
