Berry and Ice-cream Puddings

- 1 cup white Chocolate couverture (roughly chopped)
- 2 egg yolks
- 1 egg
- ¼ cup sugar
- ½ teaspoon vanilla extract
- 4 teaspoons white Rum
- ½ cup cream cheese
- ⅞ cup cream
- 1 cup mixed Berry (e. g. blueberries, strawberries and raspberries, lightly crushed)
Melt the chocolate in a bowl over a pan of hot water. Beat the egg yolks, egg, sugar, vanilla extract, and rum likewise in a bowl over the pan of hot water. Mix the melted couverture and cream cheese through the egg mixture and beat until cold.
Whip the cream until stiff peaks form and fold through the mixture. Tip the mixture into a shallow container and spread the berries over. Freeze for at least 4 hours.
Remove from the freezer around 10 minutes before serving. Serve scoops of ice cream with strawberries and whipped cream if desired.
