- 2 ¼ cups Parmesan (or Emmental, finely grated)
- 1 ⅓ cups Spelt flour
- ½ cup Almond flour
- 1 tsp Baking powder
- 1 tsp salt
- ⅔ cup cold butter (cut into pieces)
- 1 egg
- all-purpose flour (for working the dough)

Preparation steps
1.
Mix the cheese, spelt flour, almonds, baking powder and salt together and form into a heap on the work surface. Make a depression in the centre. Dot the butter around the edge of the depression, and break the egg into the centre. Chop the ingredients together with a large knife and then quickly form into a smooth dough by hand. Wrap in cling film and put in the fridge to chill for 1 hour.

Preheat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with grease-proof paper.

Roll the chilled dough out on a lightly floured surface, to about the thickness of the back of a knife. Cut out circles of roughly 5 cm in diameter and lay on the baking tray. Bake for approx. 15 minutes until the crackers are straw coloured.

Cool for around 20 minutes. Serve with cheddar and dips if desired.
