1 cup Ricotta cheese
½ cup grated Parmesan (divided)
½ cup Mozzarella (shredded)
1 egg yolk
¼ cup fresh parsley (finely chopped)
¼ cup fresh oregano (finely chopped)
3 cups fresh, lump Crabmeat (picked over)
salt (to taste)
freshly ground Black pepper (to taste)
¼ tsp cayenne pepper
1 Tbsp paprika

Preparation steps

1.
Preheat oven to 350º F. Grease a 9 x 13-inch baking dish with butter or nonstick cooking spray.

Cook pasta in a pot of salted boiling water according to package directions, until al dente. Drain well and set aside.
3.
In a large bowl, combine ricotta cheese, half of the Parmesan cheese, mozzarella cheese, egg yolk, parsley, oregano, crabmeat, salt, pepper and cayenne pepper. Fill each cannelloni shell with the cheese and crab mixture and place in the prepared baking dish. Sprinkle with the remaining Parmesan cheese and the paprika; bake for 15 to 20 minutes or until heated through and bubbly. Serve.
