- 4 green Bell pepper (rinsed; tops removed and seeded)
- 2 cups cooked, cooled, lump Crabmeat (flaked)
- 1 cup diced Celery
- 1 small carrot (peeled and cut into very thin strips)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 Tbsp freshly squeezed lemon juice
- 2 Tbsps Mayonnaise
- ½ Avocado (diced)
- 1 handful mixed salad (rinsed and finely chopped)
- 1 stalk Celery (rinsed; trimmed and cut into 3-inch / 7.6 cm strips; for garnish)

Preparation steps
1.
Place the prepared peppers into a pot of boiling water, once the water returns to a boil, reduce heart at simmer for 3 minutes.
2.
Remove the peppers from the simmering water and immediately plunge into ice water to stop the cooking process. Drain and cool on a wire rack.
3.
Mix crab meat with diced celery, carrot, salt, pepper, lemon juice, and mayonnaise. Spoon crab salad into cooled peppers and garnish with a piece of celery. Serve.
