- 800 grams Crabmeat (canned)
- 70 grams Pancetta
- 1 small onion
- 2 medium sized potatoes
- 3 ozs milk
- 3 ozs Whipped cream
- 16 ozs water
- ⅛ l fish stock
- 20 grams butter
- salt
- freshly ground peppers
- 1 Tbsp chopped parsley

Preparation steps

Cut crab meat into strips. Cut pancetta into small cubes. Peel onion and finely chop. Peel potatoes and finely dice. Fry pancetta in a skillet over high heat for 3 minutes. Add onion and fry over medium heat for 5 minutes. Add fish stock and water.

Add potatoes and bring to a boil. Reduce heat and simmer for 15 minutes until potatoes are tender. Add crab meat along with milk, cream and butter and season with salt and pepper. Continue cooking for 1 minute over moderate heat. Add parsley and serve hot. Serve with fresh bread if desired.
