1 Tbsp spicy Mustard
2 Tbsps freshly chopped parsley
2 Tbsps Worcestershire sauce
2 scallions
2 Tbsps butter

Preparation steps

Pick through the crab meat for any shells, and remove. Mix the crab with the egg, mayonnaise, mustard, parsley, and worcestershire sauce. Mix until thoroughly combined. Rinse and trim the scallion, then thinly slice. Add to the crab mixture and mix until combined. Shape the crab mixture into small cakes. Melt the butter in a nonstick pan. Cook the crab cakes slowly for 8 minutes, until golden brown on both sides, turning occasionally.

Drain on paper towels, and serve with lemon wedges and tartar sauce.
