- 400 grams Broccoli
- 4 scallions
- 2 carrots
- 2 Red Bell pepper
- 1 garlic clove
- 2 Tbsps olive oil
- 350 milliliters Vegetable broth
- 250 grams Couscous (Instant)
- salt
- freshly ground peppers
- 2 Tbsps freshly cut mint
Preparation steps

Rinse, broccoli, scallions, carrots and peppers and drain. Slice scallions and cut diagonally into rings. Peel carrots and cut into slices. Cut peppers in half and cut out stem and seeds and ribs and cut into small pieces. Peel garlic and chop finely. In a pan, sauté vegetables in hot oil for 1-2 minutes, while stirring. Deglaze pan with broth. Mix in couscous and cook for about 5 minutes, stirring occasionally. Season with salt and pepper.

To serve, place vegetable couscous in bowls and garnish with mint.
