Preparation steps

1.

Mix eggs thoroughly, season with salt and pepper and cook in 1 tablespoon of oil to an omelet. Let cool and cut into 8 wedges.

Peel carrots and cut diagonally into slices. Peel, onion, halve and cut into thin strips. Rinse peppers, halve, remove the seeds and ribs and cut into strips. Rinse cabbage, pat dry, chop finely. Rinse frisee, shake dry and cut into strips. Rinse tomatoes and cut into eighths. Mix all in a bowl.

For dressing, peel garlic and press. cut pepperoni into thin rings, combine both with lime juice, vinegar and cilantro, season with salt and pepper. Drizzle over the salad and garnish with omelet wedges.
