Colorful Artichoke Salad

- 4 Artichoke
- salt
- 4 Tbsps White vinegar
- 8 peas
- 60 grams Chorizo
- 80 grams Daikon radish
- 2 handfuls colorful Leaf lettuce variety
- 2 Tbsps almonds (unpeeled)
- 2 Tbsps lemon juice
- 1 pinch sugar
- freshly ground peppers
- 6 Tbsps olive oil
- 8 Radish
- Vermouth ((for garnish)
- 2 Tbsps Caper
Preparation steps
Bring 1 liter (approximately 4.25 cups) of water, 1 teaspoon salt and 2 tablespoons vinegar to a boil. Add the artichoke into the pot. Boil for about 15 minutes, until there's a slight bite. Drain, rinse in cold water and drain.
Rinse and blanch the pea pods in salt water for about 2 minutes. Remove from the heat, drain well and set aside.
Slice the chorizo and fry in a hot pan until crispy. Drain on paper towel.
Peel the radish, cut into thin slices and season with salt. Rinse the lettuce and shake dry. Coarsely chop the almonds.
Mix the oil, lemon juice, remaining vinegar, sugar, salt and pepper.
Rinse and cut the radishes into thin slices. Arrange the artichokes on plates. Fill the plates with lettuce, radishes, pea pods and vermouth. Drizzle with the dressing and serve garnished with chorizo, almonds and capers.
